Soybean is a member of the oilseed and forage plant family, originating in East Asia. This plant is known by various names in Persian, including Sowja, Lobia, Poshm Baqela, Kurd Baqela, and Lobia Daneh Rughani, with native oilseed varieties in China and Manchuria. Oilseed soybean contains approximately 18% edible oil, which is highly nutritious, and it also has 35-50% protein content. In East Asian regions, due to its high protein content, soybean is referred to as the "meat of the fields." The protein in soybean has a high biological value, and its seeds are rich in digestible nutrients, calcium, iron, and various vitamins.
