What is aflatoxin in corn?

Aflatoxins are a group of substances produced by certain molds. These fungi are called Aspergillus flavus and Aspergillus parasiticus, and they can be identified by their olive green or gray-green color on the grain in the field or in corn storage. Although aflatoxin is not automatically produced whenever the grain becomes moldy, the risk of aflatoxin contamination in moldy corn is much higher than in low mold corn.
